My Go-To Anti-Inflammatory Soup

Cooked cabbage is my go-to vegetable after over-indulging! Its light and cooling nature helps reduce heat in the GI tract. While its high fiber content helps bind toxins for elimination.

Fresh ginger and turmeric add more anti-inflammatory power while also providing digestive support. Coriander is a cool digestive. It and garlic are expectorants - making this soup perfect for rainy days!

Serves 4 - Purifying

1tbsp ghee

1c yellow onion, thinly sliced

2 garlic cloves, diced

1tbsp fresh ginger, grated

1/2tsp turmeric powder

1/4tsp coriander powder

5c green cabbage, thinly chopped

1c carrots, chopped

1lb shredded chicken

4c chicken stock or bone broth

1 3/4c water

Salt & pepper to taste

Lime

Heat ghee in a large pot on medium heat. Add onions, stirring occasionally. When they start to brown, add garlic and spices stirring until fragrant. Add cabbage, carrots, chicken, stock, and water. Increase heat until boiling. Reduce heat to a low boil and cover. Cook for 20 minutes. Add a squeeze of lime juice before serving. Enjoy!
